Our garden is still producing lots of yellow squash. So I decided to add some puree to my protein pudding! I also had some bananas that were turning a bit dark. So I pureed two bananas and enough yellow squash to give me about a cup of puree. I added a box of sugar free fat free banana cream pudding mix, two scoops of vanilla protein powder, one cup of fat free milk and a splash of coconut extract. Mixed that up real good, divided it into dessert cups and added chopped walnuts and shredded coconut (no sugar added coconut). These lovelies are chilling in the fridge and I’ll be indulging in one tonight!
